Tiger sugar is known for its brown sugar and tiger stripes.
Brown sugar has a deep, caramel flavor due to the added molasses.
It slowly floats down along the inner side of the cup leaving the unique stripes, ”tiger stripes.”

步驟 Step

1. 先將粉圓粉倒入鍋中 Pour the tapioca pearl powder into the stand mixer.

2. 緩緩加入570ML的水 Slowly add 570ml of room temperature water.

3. 攪打約一分鐘,轉至中速至成團 Mix for 60 seconds, then gradually raise the speed to medium speed until finishing up the batter.

4. 取出後加入適當的水量揉勻 Add the appropriate amount of water to knead the dough.

5. 擀成可放入機器的大小形狀 Knead and press the dough into a flat that can fit the rear feed hoppers of the machine.

6. 鋪上少量的粉使鐵板不沾黏 Dust a few powder to prevent sticking.

7. 開始切割 Start the cutting.

8. 將粉圓到入滾水中(1:8) Pour the tapioca pearls into the boiling water. (1:8)

9. 稍微攪拌防止沾黏 Stirring occasionally to prevent sticking.

10. 悶煮15分鐘(仍須攪拌防止沾黏)Bring it to a boil again, keep the pot covered for 15 mins.(Stir occasionally)

11. 觀火在悶15分鐘,15分鐘後即可起鍋 After 15 minutes, turn off the heat, keep the pot covered, and allow it to sit for another 15 minutes.

12. 可加入糖或糖漿增加風味 Add some sugar or brown sugar to improve the flavor and taste.
